Food is essential to life. Every day, we purchase, prepare, and consume food. We also discard a lot of food without thinking of the consequences that may have on our planet. But what is food? What makes it nutritious, and what makes it safe? Join us to learn about the composition of food from nutrients to microorganisms and chemical compounds. Learn how scientists use biology and chemistry to extend the shelf life of food, to determine if your food is safe, to reduce food waste and to make our food systems sustainable for a healthier planet. In this interactive course, we will use case studies, experiments, and discussion to explore current issues in the fascinating and rapidly evolving world of food science. If you are what you eat, it’s worth learning what is in your food.
